Never had Cincinnati chili? Well, it's REALLY Greek chili and this incredible ground meat flavoring got introduced at Cincinnati, Ohio in the early 1920s when "Empress Chili" opened next door to the old Empress Theater downtown. Empress Chili restaurants are still around as are Skyline Chili and Gold Star Chili restaurants. But they all pale next to Dixie Chili which, ironically, was established as a restaurant franchise in Kentucky, just across the Ohio River from Cincinnati.
Now, here's the second thing if you are unfamiliar with Cincinnati chili: it's served as three different meals.
1. by itself (some brands use red kidney beans, some skip the beans -- I like the beans in all applications).
2. over spaghetti, topped with sharp cheddar cheese (plus Tabasco, diced onions, or other condiments that you might personally enjoy).
3. as a hot dog/Coney sauce.
Honestly, it's awesome all three ways the restaurants serve it. I make it at home all the time (I cobbed the secret Empress Recipe from a former employee) and I can dispel one MYTH right now... it has NO CHOCOLATE in it if it's made correctly. I see such recipes all the time, I've tried them just for the heck of it, and they are universally inferior. The chief ingredient in Cincinnati chili is TIME! It takes several hours to make it exactly right - it's a labor of love and a meticulous process.
In any case, Dixie Chili is notably better than my own home made Cincinnati chili (and equally better than the recipes of "The Big Three") and I order it online to use mostly for hot dog sauce. Once you serve hot dogs/Coneys with this product as a topping people will drive you crazy wanting the recipe (which of course, you will not have so you'll have to lie like Satan and assert that it's a family secret!) It's just as good on spaghetti but that requires so much that I usually just go ahead and make it from my own recipe for that application.
Anyway, you probably get it by now that I'm a big fan of this superb chili and I highly recommend it to all chili lovers, even though it's a bit pricey.
