They proudly proclaim it the best in the world. We have found a native of Spain living in the US who has recreated it from a Catalunya recipe. It tastes great! Spanish salchichón differs from chorizo, because it has more garlic and no paprika. It's closest relative is the salami sausage of Italy. About 2 inches thick.
