The bustling city Vic is the center of a cluster of ancient Romanesque towns nestled in the Pyrenees Mountains north of Barcelona. Their salchichón is known throughout Spain. They proudly proclaim it the best in the world. We have found a native of Spain living in the US who has recreated it from a Catalunya recipe. It tastes great! Spanish salchichón differs from chorizo, because it has more garlic and no paprika. It's closest relative is the salami sausage of Italy. About 2 inches thick.
