Natural leavening springs from the "mother", a nucleus of fermented dough to which water and flour are added little by little. This is a process that is repeated time after time, in exactly the same way. The technique requires skill and attention. Most importantly, it requires neither chemical additives nor preservatives. However, the process guarantees an unusually long "life" of the product. Dough leavened in this totally natural way also offers otherwise unachievable qualitative characteristics such as lightness and incomparable fragrance. This baker is one of the few remaining followers of this great tradition, and is made using a specially selected 45 year old live 100% sourdough yeast.
